Homemade Bajra Methi Muthiya Recipe

Ingredients:
1.5 cups bajra flour
1/2 cup rawa (semolina)
1 cup methi leaves
1/2 cup curds ( yogurt)
2 tbsp ginger, garlic & chilli paste
1/2 lemon juice
1 tbsp oil
1/4 tsp turmeric powder
1/4 tsp soda bi -carb
1/4 tsp hing (asefodita)
1/2 tsp ajwain ( carom seeds)
salt as per taste
Ingredients for Tadka:
2 whole red chillies
1/2 tbsp rai ( mustard seeds)
1 tsp jeera ( cumin seeds)
1 tbsp white til (sesame seeds)
7-8 curry leaves
some chopped coriander leaves
Method:
Take a bowl mix all the dry ingredients along with the lemon juice and oil . Then add little by little the curds to make a semi soft dough. If needed a little water can be also added.
Grease your palms with a little oil and make small balls of the dough and roll into medium thickness long logs. Then place them on a greased plate .
In a steamer or vessel heat some water . Then place the plate in the steamer. Cover and steam for 10-15 minutes or till it is cooked.Pierce a knife to check if it is cooked.The knife has to come out clean.
Remove and allow it to cool. Then cut into small round pieces. Keep aside.
In a kadai or non stick pan heat 3-4 tbsp oil then add the rai, jeera when it splutters add the whole chillies,curry leaves, white til and saute for a second.Add the cut muthiya and cook on low flame stirring continuously for 1-2 minutes.
Remove in a serving plate and garnish with some chopped coriander leaves.
Enjoy this healthy and yummy muthiya with green chutney.
