Homemade Green Lentil Salad Recipe

Ingredients:
1 cup green lentil
1 no chopped medium onion
1 no chopped medium tomato
1 no chopped medium cucumber
3-4 tbsp chopped coriander leaves
2 tbsp chopped pudina/mint leaves
1 no lemon juice
1 tbsp chilli flakes
1 tsp pepper powder
2 tbsp olive oil
salt as per taste
Method:
Clean ,wash and soak the lentil in 2 cups water for 30 minutes.
In a vessel boil 3 cups water with 1 tsp salt then add the lentil in it . Boil on low flame for 5 minutes or till the lentil is cooked, do not over cook it. Strain the water and keep aside. Do not throw the water use it in dals or curries.
In a bowl add the cooked lentils, chopped onion, tomato, cucumber, coriander leaves and pudina leaves.
To make the dressing take a small glass bowl add the lemon juice, salt, pepper, chilli flakes and oil. Mix it well.
Add the dressing to the lentils and give it a good toss.
Enjoy this healthy and yummy salad as a complete meal by itself.
