Homemade Paneer Changezi Recipe

Ingredients For Masala:
2 nos big onions chopped into big cubes
4 nos tomatoes chopped into big cubes
1 inch chopped ginger
5-6 nos garlic pods
2 nos chopped green chillies
10 -12 nos cashewnuts / kaju
1 tsp jeera/cumin seeds
3=4 whole red chillies
1/2 tbsp whole coriander seeds
salt as per taste
Ingredients:
250 gms fresh paneer cubes
masala paste
1/4 cup fresh cream
1 no tej patta/ bay leaf
1 cinnamon stick
1 no black cardamom
1 tsp garam masala
2 tsp deggi chilli powder
1/2 tbsp kasuri methi / dried fenugreek
some chopped coriander leaves
salt as per taste
Method:
In a vessel boil one cup water to it add all the chopped onions, tomatoes, ginger, garlic, green chillies, jeera, whole red chillies, coriander seeds and kaju. Boil on low flame till all the water dries up. Allow this masala to cool.
Once the masala is cooled grind into a fine paste. Keep aside for future use.
Cut the paneer into small cubes.
In a kadai heat 2-3 tbsp oil then saute the tej patta, cinnamaon stick and black cardamom. Add the masala paste and cook on low flame till oil drops are seen on the top or on the sides of the vessel. Add all the chilli powder, garam masala , salt and kasuri methi then cook for another 2-3 minutes. Add the paneer cubes and about 1/4 cup water. Cover and cook again for another 2-3 minutes.
Add the cream and mix well.
Remove in a serving bowl and garnish with some cream and chopped coriander leaves.
Enjoy this yummy paneer changezi with roti, paratha, poori or naan.
