Homemade Sattu Ke Ladoo Recipe

Ingredients:
2 cups sattu atta ( roasted gram flour)
3/4 cup ghee
1/2 cup almond or almond flour
3/4 cup makhana/ foxnuts
3 tbsp pumpkin seeds
3 tbsp sunflower seeds
3 tbsp melon seeds
1 tbsp white sesame seeds / til
2 tbsp Gond ( optional)
15-20 dates
1 tsp cardamom powder
Method:
Remove the seeds from the dates and keep aside for future use.
Heat 2 tbsp ghee in a pan or kadai then add the gond and fry on low flame till light brown and crispy. Remove in a plate.
Then add the makhana and fry on low flame till crispy. Remove and keep it in a plate.
If using almonds fry them also on low flame till light brown in colour.
Lastly add all the seeds and seasameand roast for half a minute. Remove them also in a plate.
When cool add the makhana, all the roasted seeds and almonds in a grinder jar and grind finely on pulse mode. To it add the the dates and grind again to form a fine paste. Remove in a plate.
Crush the fried gond into small pieces and add them to the dates mixture.
In a heavy based kadai dry roast the sattu atta on low flame for 4-5 minutes.
Add the ghee to the roasted sattu atta and cook again on low flame for another 5 minutes. Remove and keep aside.
When the sattu mixture is warm enough to touch add the dates mixture and cardamon powder into it and give it a good mix.
Roll it into small round balls till the entire mixture is used up.
