Homemade Kaju Mithai Recipe

Course : Sweet / Mithai

Cuisine: Indian

Servings: 1 kg

Prep Time: 10 minutes

Cook Time : 20 minutes

Making Time: 30 minutes

Total Time: 60 minutes

Ingredients for base :

  • 400 gms kaju / cashewnuts powder

  • 350 gms sugar

  • 175 ml water

  • 100 gms milk powder

  • 1 tbsp ghee

Ingredients for stuffing/ filling :

  • 2 tbsp chopped almond

  • 2 tbsp chopped pistachio

  • 2 tbsp chopped kaju / cashew

  • 1 tsp cardamom powder

  • 1 tsp saffron powder or few strands of saffron soaked in 1 tsp warm milk

  • 1 cup above cooked kaju mixture

  • Silver foil for decoration ( optional)

Method :

  1. In a grinder jar add half the quantity of the kaju and grind on pulse made only into a fine powder . Repeat the process for the remaining kaju also.

  2. Sieve the kaju powder.

  3. Mix the milk powder with the kaju powder and keep aside for future use.

  4. In a heavy based vessel or kadai add the sugar and water and cook on low flame till the sugar melts completely and the syrup is slightly sticky. Switch off the flame. Then add the kaju and milk powder mixture to the sugar syrup ensuring there are no lumps.

  5. Again keep it on flame and cook on low flame stirring continuously for 5 minutes then add the ghee and cook till it thickens. To check if it is cooked take some mixture and if it becomes a ball the mixture is ready. Otherwise cook for another 2-3 minutes till done.

  6. Allow this mixture to slightly cool. When it is warm enough place it on a butter paper or silicone mat and knead it to form into a soft dough.

  7. To make the filling/stuffing add 1/4 part of the kaju dough, saffron powder and the chopped nuts together.

  8. Divide the kaju dough into 4 equal parts. Take one dough ball and slowly flatten it then place a good quantity of the filling in the center and bring all the sides of the mixture together and then flatten the ball with your fingers .

  9. Repeat the process till all the balls are ready .Decorate them with silver foil. Cut diagonally into 4 or 8 pieces.

Enjoy these yummy Kaju mithai on festivals.
