Homemade Sri Lankan Kankun ( Water Spinach ) Recipe

Ingredients:
2 bunches kankun leaves/ water spinach
1 medium size onion sliced
1 medium size tomato sliced
2 nos green chillies chopped into big pieces
1/2 tbsp chopped garlic
1 tsp jeera/ cumin seeds
1/2 tbsp chilli flakes
salt as per taste
Method:
Remove and discard the stalk from the leaves. Wash all the leaves properly. Allow it to dry then chop them finely.
In a kadai heat 1 tbsp oil then add the jeera when it splutters saute the garlic.
Add the sliced onion and cook till it is translucent then to it add the sliced tomato, salt and chopped chillies. Cook till the tomato is mushy and done. Then add the chilli flakes and chopped spinach with 1/4 cup water.
Cover and cook till the spinach is soft or drops of oil is seen on the sides or top. Switch off the flame.
Remove in a serving bowl.
Enjoy this yummy Sri Lankan side dish with rice or chapati.
