Homemade Vegetable Manchow Soup Recipe

Servings: 4-5 pax

Prep Time: 10 minutes

Cook Time : 10 minutes

Total Time: 20 minutes

Ingredients:

  • 1 no onion chopped finely

  • 1/2 tbsp ginger chopped finely

  • 1/2 tbsp garlic chopped finely

  • 1-2 nos green chillies chopped finely

  • 1 no small carrot chopped finely

  • 6-7 nos french beans chopped finely

  • 1/2 cup cabbage chopped finely

  • 1 no small green capsicum chopped finely

  • 1/4 cup spring onions chopped finely

  • 1/2 cup fried noodles for garnishing

  • 1 tsp white pepper

  • 2 tbsp cornflour

  • 3-4 tbsp dark soya sauce

  • 2 tsp white vinegar

  • salt as per taste

Method:

  1. Clean, wash and cut or add the carrot, beans and cabbage separately in a chopper and chop them finely.

  2. Peel the onion and cut it finely. Similarly cut the capsicum also finely.

  3. Put some water in the cornflour and make a watery paste. Keep aside for future use.

  4. In a pot heat 1 tbsp oil then saute the garlic, ginger and green chilli.

  5. Add 4 cups of water or vegetable stock. Allow it to boil then add all the chopped veggies, onion, half the spring onions, salt, pepper, soya sauce and vinegar. Cook for about 2-3 minutes.Then add the cornflour paste and keep stirring continuously,cooking for another 2-3 minutes till the soup thickens slightly.

  6. Remove in serving bowls and garnish with some chopped spring onions and fried noodles.
