Homemade Vegetable Manchow Soup Recipe

Ingredients:
1 no onion chopped finely
1/2 tbsp ginger chopped finely
1/2 tbsp garlic chopped finely
1-2 nos green chillies chopped finely
1 no small carrot chopped finely
6-7 nos french beans chopped finely
1/2 cup cabbage chopped finely
1 no small green capsicum chopped finely
1/4 cup spring onions chopped finely
1/2 cup fried noodles for garnishing
1 tsp white pepper
2 tbsp cornflour
3-4 tbsp dark soya sauce
2 tsp white vinegar
salt as per taste
Method:
Clean, wash and cut or add the carrot, beans and cabbage separately in a chopper and chop them finely.
Peel the onion and cut it finely. Similarly cut the capsicum also finely.
Put some water in the cornflour and make a watery paste. Keep aside for future use.
In a pot heat 1 tbsp oil then saute the garlic, ginger and green chilli.
Add 4 cups of water or vegetable stock. Allow it to boil then add all the chopped veggies, onion, half the spring onions, salt, pepper, soya sauce and vinegar. Cook for about 2-3 minutes.Then add the cornflour paste and keep stirring continuously,cooking for another 2-3 minutes till the soup thickens slightly.
Remove in serving bowls and garnish with some chopped spring onions and fried noodles.
