Homemade Mix Vegetable Recipe

Homemade Mix Vegetable Recipe

Cuisine: Indian

Servings: 3-4 pax

Prep Time: 10 minutes

Cook Time : 15 minutes

Total Time: 25 minutes

Ingredients:

  • 1 no big onion finely chopped

  • 2 nos green chillies finely chopped

  • 1 tsp chopped ginger

  • 1 cup chopped ash gourd

  • 1/2 cup chopped carrot into cubes

  • 1/2 cup red pumpkin chopped into cubes

  • 1/2 cup french beans cut into one inch long pieces

  • 1 no brinjal cut into cubes

  • 1 no small green capsicum cut into cubes

  • 1 tsp jeera/cumin seeds

  • 1/4 tsp hing/ asefodita

  • 1 tsp turmeric powder

  • 2 tsp red chilli powder

  • 1/2 tbsp coriander powder

  • 1 tsp jeera/ cumin powder

  • 1 tsp garam masala

  • some chopped coriander leaves

  • salt as per taste

Method:

  1. Peel, wash and chop all the veggies into small cubes.

  2. In a heavy based vessel or kadai heat 3 tbsp oil then add the jeera when it splutters add the hing , turmeric powder and chopped onions . Cook till the onions are translucent.

  3. Add the chopped pumpkin, ash gourd, carrot and beans. Cover and cook till they are 80% cooked then add the green chillies, capsicum and brinjal. Again cover and cook till they are soft then add all the dry spices, mix and stir well. Cook for another 5 minutes.

  4. Remove in a serving dish and then garnish it with some chopped coriander leaves.
