Homemade Mix Vegetable Recipe

Ingredients:
1 no big onion finely chopped
2 nos green chillies finely chopped
1 tsp chopped ginger
1 cup chopped ash gourd
1/2 cup chopped carrot into cubes
1/2 cup red pumpkin chopped into cubes
1/2 cup french beans cut into one inch long pieces
1 no brinjal cut into cubes
1 no small green capsicum cut into cubes
1 tsp jeera/cumin seeds
1/4 tsp hing/ asefodita
1 tsp turmeric powder
2 tsp red chilli powder
1/2 tbsp coriander powder
1 tsp jeera/ cumin powder
1 tsp garam masala
some chopped coriander leaves
salt as per taste
Method:
Peel, wash and chop all the veggies into small cubes.
In a heavy based vessel or kadai heat 3 tbsp oil then add the jeera when it splutters add the hing , turmeric powder and chopped onions . Cook till the onions are translucent.
Add the chopped pumpkin, ash gourd, carrot and beans. Cover and cook till they are 80% cooked then add the green chillies, capsicum and brinjal. Again cover and cook till they are soft then add all the dry spices, mix and stir well. Cook for another 5 minutes.
Remove in a serving dish and then garnish it with some chopped coriander leaves.
