Homemade Instant Palak Rawa Uttapam Recipe

Ingredients :
For Batter :
2 cups rawa/ semolina
1 cup curds / yogurt
1/2 cup palak puree
2 tsp ENO
salt as per taste
For Toppings:
200 gms grated paneer
1 no big onion finely chopped
1 no deseed tomato finely chopped
4-5 nos green chillies finely chopped
some chopped coriander leaves
1 tsp chaat masala
some grated cheese (optional)
salt as per taste
Method:
In a bowl add all the ingredients of the batter excluding the ENO. Mix well and then add little by little water to make a dropping consistency batter. Allow it to rest for 10 minutes.
Add all the ingredients of the toppings in a bowl and mix well. Keep aside for future use.
Heat a non stick tawa. Add the ENO in the batter and mix well. If it is too thick a little water can be added to the batter.
Take a ladle of the batter and pour it on the tawa to form half inch thick round pancake. Sprinkle some toppings and oil all over the uttapam . Cover and cook on low flame till light brown from the bottom. Flip and cook on low flame on the other side too.
Remove on to a plate and sprinkle some grated cheese all over it.
Repeat the process till all the batter is used .
