Homemade Carrot Poriyal Recipe

Ingredients:
1 no big carrot
1/2 tbsp urad dal
1 tsp mustard seeds
1 small onion finely chopped
1-2 curry string chopped
1/4 cup grated fresh coconut
salt as per taste
some chopped coriander leaves
Method:
Peel, wash and chop the carrot into small cubes.
Boil some water with 1/4 tsp salt, then add the cut carrots and cook for only 3-4 minutes or till slightly soft.
Clean, wash and soak the dal in some water for 5 minutes then drain all the water from the dal and keep aside.
In a pan heat 1 tbsp oil then add the mustard seeds when it splutters add the dal and cook for 1-2 minutes. To it add the curry leaves and chopped onions. Cook on low flame till the onions are pinkish in colour. Add the boiled carrots and salt and fry for a minute. Lastly add the chopped coconut and mix well.
Remove in a serving bowl and garnish with some chopped coriander leaves.
