Homemade Khandvi Bites Recipe

Ingredients For Khandvi Bites:
1 cup besan / gramflour
1 cup curds/yogurt
2 cups water
1/4 tsp asefodita/hing
1 tsp turmeric powder
1 tsp ginger powder or ginger paste
salt as per taste
Ingredients For Tadka and Garnishing:
1 tsp mustard seeds/rai
2 tsp white til/ sesame seeds
1-2 green chillies slit in the center
some chopped curry leaves
some chopped coriander leaves
1/4 cup fresh grated coconut
Method:
In a bowl sieve the besan then add the hing, turmeric powder, ginger powder and salt. Mix well then add the curds to it and whisk properly. Add the water to the mixture little by little and whisk well to make a smooth and lump free batter. Keep aside for future use.
In a non stick pan or a heavy based vessel add the besan batter and cook on low flame stirring continuously so that there are no lumps and the batter does not burn.
Cook the batter for 20 minutes or till it leaves the sides of the pan. Then switch off the flame and remove the pan from the gas. Pour the cooked batter evenly into a greased plate or cake tin. Allow the khandvi to set for 5 to 10 minutes or till it leaves the side of the plate/tin.
Remove the khandvi on to a plate and cut into small cubes with a knife or pizza cutter.
Heat 2 tbsp oil in a small pan then add the mustard seeds when it splutters add the curry leaves, green chillies and til. Pour this tadka on the khandvi bites and then garnish them with some chopped coriander leaves and grated coconut.
Enjoy this yummy snack with green chutney.
