Homemade Maharashtrian Bhindi Recipe

Ingredients:
500 gms bhindi/ okra
3 tbsp peanut oil preferably
1 tsp turmeric powder
2 tsp chilli powder
some coriander leaves for garnishing
1/2 lemon juice
salt as per taste
Ingredients For Masala :
2 tbsp peanut oil preferably
1/4 cup dried coconut
1/2 cup peanuts without skin
1 tsp jeera/ cumin seeds
2 nos green chillies
1 inch ginger
3-4 garlic pods
1 -2 string curry leaves
Method:
Peel, wash the garlic, ginger, green chillies and curry leaves. Then cut into big pieces.
In a non stick pan dry roast the peanuts till slightly brown in colour.
In a grinder jar add the roasted peanuts and all the remaining ingredients of the masala. Grind into a coarse paste on pulse mode only. Remove and keep aside for future use.
Wash the bhindi properly . Then cut the top and tail of all the bhindi. Chop them into small pieces.
In a pan heat oil and add the peanut masala , turmeric and chilli powder then cook on low flame till golden brown and oil leaves the pan.
In the same pan add the remaining oil and add the chopped bhindi and cook on low flame for 4-5 minutes. Then add the salt , cover and cook on low flame till the bhindi are soft and cooked .
Add the peanut masala and cook for another 5 minutes.
Remove from flame and garnish with some coriander leaves and lemon juice.
Enjoy with chapati or parathas.
