Homemade Crispy Vegetable Recipe

Ingredients For Crispy Vegetables:
1/3 cup broccoli florets
1/4 cup green capsicum
1/4 cup yellow capsicum
1/4 cup carrots
1/4 cup babycorn
1/2 cup mushroom
1/2 cup zucchini
oil for frying
Ingredients For Batter:
1/2 cup maida/white flour
3 tbsp cornflour
1 tsp black pepper powder
1/4 tsp baking powder
salt as per taste
oil for frying
Ingredients For Sauce:
1 no finely chopped onion
2 nos finely chopped green chillies
1/2 tbsp finely chopped garlic
1/2 tbsp finely chopped ginger
2 tbsp ketchup
4 tbsp soya sauce
2 tbsp chilli sauce
4 tbsp homemade schezwan sauce
2 tsp white pepper powder
salt as per taste
Method:
Peel, wash and cut the carrot into half moon shape with medium thickness. Wash the mushrooms, babycorn , capsicum, broccoli and zucchini . Cut the babycorn into small half inch cubes, capsicum into also half inch square pieces, slice the mushrooms and cut the broccoli into florets.
In a bowl add all the batter ingredients and make a dropping consistency batter by adding little water at a time.
In a kadai heat some oil. Add a few veggies in the batter , mix well then drop them into the hot oil. Fry the veggies on medium to hot oil. Remove them on a tissue towel.
Repeat the process till all the veggies are fried.
In a pan heat 1 tbsp oil then saute the garlic, ginger and chilles on high flame . Add the onions and cook till slightly pinkish in colour to it add all the sauces, soya, pepper and salt.
To the cooked sauce add all the fried veggies in it and toss them on high flame.
Remove in a serving dish.
