Homemade Rice Paper Spring Rolls Recipe

Ingredients:
4 nos rice paper sheets
1 no small onion sliced thinly
1/2 carrot thinly sliced
4-5 nos french beans cut thinly long
1/4 green capsicum thinly sliced
1/2 cup cabbage thinly sliced
1 no green chilli slit in the center
2 tbsp schezwan sauce
1 tsp black pepper
1 tsp white pepper
salt as per taste
Method:
Peel, wash the onion and carrot and then cut them finely into long pieces. Similarly string the beans then wash and cut them finely into long pieces. Wash the the cabbage and capsicum also and cut into thin long julienne.
In a pan heat 2 tbsp oil then add the onion and saute for a second then add the beans, carrot , cabbage and capsicum then cook on high flame till all the veggies are slightly soft but crunchy then add the schezwan sauce, salt both pepper powders and give it a good toss. Remove and allow it to cool.
Soak a rice paper sheet in water for some time till soft then remove and keep it on a board . Place some mixture on one side of the sheet and then fold it slowly but tightly to form a spring roll.
Similarly repeat the process for the remaining rice sheets also.
Grease a non stick pan then place all the spring rolls on it and cook for a 1-2 seconds on both sides.
Remove in a serving dish.
Enjoy with some scezwan sauce or ketchup.
